The Recipe of Inspiration: Homemade Yeast Buns

So after two attempts, I finally baked the perfect yeast bun for bbq sandwiches (could be used for hamburgers as well.) The recipe is quick, actually giving you a soft, yeast bun in less than an hour. In my life, if you can bake anything from scratch with common cupboard necessities in less than an hour, saving you from hauling all kids to the grocery store...then you have hit a pot of gold. (Recipe came from http://www.tasteofhome.com/ but has been altered to perfection.)

Ingredients:
2 tablespoons active dry yeast
1 cup plus 2 tablespoons warm water plus
1/3 cup vegetable oil
1/4 cup sugar
1 egg
1 teaspoon salt
3 -3 1/2 cups all purpose flour

Directions:
Preheat oven to 425 degrees. Dissolve yeast in warm water in a large bowl. Add oil and sugar to yeast mixture, let is sit for 15 minutes. Add egg, salt, and flour. Turn out onto a floured surface and knead for 5 minutes. Divide into 8 pieces and shape as desired. Flatten them for larger buns. Place 3 inches apart on a greased baking sheet. Cover with tea cloth and let sit for 20-30 minutes or until double in size. Bake for 8-12 minutes. Cool on wire rack.

UPDATE: I had several of these left over and they worked perfect for personal size pizzas. Just slice and let the kiddos have fun adding pizza sauce, cheese, and toppings.
